- 2 cups of chicken broth.
- 1 cup of heavy whipping cream.
- 1 cup of shredded cheddar cheese.
How To Prepare Keto Broccoli Cheddar Soup
- Wash the broccoli well and cut it so that you separate the stems from the flowers and chop them into small pieces individually.
- Put the olive oil and a third of the butter in a suitable size saucepan over a medium heat.
- Add chopped onions and chopped broccoli stalks to the pot and cook until they turn brown.
- Add garlic to the pot and leave until it turns light brown, stirring occasionally.
- Season the mixture with salt, pepper, paprika powder and cayenne pepper and let it cook for another minute.
- Add chicken broth to the mixture, stir well, cover the pot and leave for 5 minutes.
