Ingredients

    • 5 cups of broccoli.
    • 1 tablespoon of olive oil.
    • 1/4 cup of butter.
    • 1 piece of chopped red onion.
    • 3 cloves of garlic.
    • 1/2 teaspoon of salt.
    • 1/4 teaspoon black pepper.
    • 1/2 teaspoon paprika powder.
    • 1 pinch of cayenne pepper.
    • 2 cups of chicken broth.
    • 1 cup of heavy whipping cream.
    • 1 cup of shredded cheddar cheese.

    How To Prepare Keto Broccoli Cheddar Soup

    1. Wash the broccoli well and cut it so that you separate the stems from the flowers and chop them into small pieces individually.
    2. Put the olive oil and a third of the butter in a suitable size saucepan over a medium heat.
    3. Add chopped onions and chopped broccoli stalks to the pot and cook until they turn brown.
    4. Add garlic to the pot and leave until it turns light brown, stirring occasionally.
    5. Season the mixture with salt, pepper, paprika powder and cayenne pepper and let it cook for another minute.
    6. Add chicken broth to the mixture, stir well, cover the pot and leave for 5 minutes.
    7. Remove the saucepan from the heat and transfer the stock and vegetable mixture to a food processor to blend until the ingredients are creamy.
    8. Heat the remaining amount of butter in the same saucepan and fry the broccoli florets in it, stirring occasionally.
    9. Strain the stock and vegetable mixture through a sieve and add the drained quantity to the saucepan over the broccoli florets.
    10. Mix the ingredients well and season with more black pepper and salt to taste.
    11. Leave the soup on the fire for a few minutes, then add the cream and cheese and leave it again on the fire until the cheese melts completely.
    12. Serve the soup hot and garnish with a little shredded cheddar cheese.
